Douhua – Silken Tofu Delicacy

Fresh silken tofu refined with Ajo Blanco and a hint of licorice oil. Topped with a delicate asparagus tartare, garnished with chive blossoms and candied ginger.

Grilled green asparagus with Lacto-Shiitake powder and young wild cabbage, paired with blanched asparagus, fermented Cedro, and a creamy sesame dressing.

Fujisan – Brioche Creation

Warm brioche with Amazake glaze, sprinkled with black cumin and lemon thyme. Accompanied by a dip of physalis, preserved lemon, and finest olive oil.

Nameko mushrooms glazed with yeast garum and grilled, served on crisp peas in a velvety tofu cream with lovage.

Oukanomiyaki – Buckwheat Pancake

Savory buckwheat pancake filled with confit mushrooms, apple caramel, and buckwheat Koji paste. Topped with crispy mushrooms, refined with chives and porcini powder.

Ohitashi – Refreshing Note

Tomato and chili sorbet on a fine brunoise of ginger bud and green tomato, marinated in house-made Mirin and soy sauce.

Amazake – Sweet Finale

Amazake ice cream with rhubarb granité and orange blossom butter. Complemented by fermented rhubarb and green celery for a harmonious balance.
